Being a fitness instructor, model and personal trainer keeps me constantly on my feet running all around the city on a daily basis. Some days I'll dash from a client, to teach a class, to a casting call, to my own workout and then back to teach another class. Being constantly on the go can definitely take a toll on my energy level! Over the years I have perfected a recipe for what I like to call "energy balls." These come in super handy when I am on the go, save me from a growling stomach and taste pretty fantastic! Check out this recipe the next time you need a pick-me-up snack on a busy day.
In a bowl combine:
1 cup old fashioned oats (dry)
1/2 cup mini chocolate chips
1/2 cup natural peanut butter (I love chunky)
A dash of Cinnamon
A sprinkle of chia seeds
Drizzle a tbsp of Honey on top of the mixture and combine until all the ingredients are mixed thoroughly. Place the mixture in the refrigerator for about 15-20 minutes until chilled. Remove the mixture and roll into inch wide balls. That's it! No baking time necessary. Store the balls in a plastic container in the fridge for up to two weeks.
